THE ARTISANAL BURRATA PUGLIESE MORÉ

From hands to heart without neglecting the head. These are the steps, steeped in craftsmanship and feeling, that guide our cheesemakers throughout the production of Apulian artisanal burrata. Appreciated and recognised the world over as the epitome of genuine Apulian dairy goodness, burrata amazes at first glance and surprises at first bite.

The shiny pasta filata casing, made exclusively from locally sourced cow’s milk, is enriched by filling it with a delicious filling composed of hand-cracked pasta filata dipped in cream. It is the very fresh stracciatella, therefore, that forms the creamy and soft heart of the burrata and gives value to this fresh, carefully shaped pouch-looking.

With a quick final touch, our artisans close the burrata, choosing whether to give or not its characteristic head we have all come to know

AN EVER MORE INTENSE AND DELICIOUS FLAVOUR

We respect tradition, which is why we make burrata di Puglia following the recipe that has been handed down for years in our land. However, experience and living knowledge of the raw material also allow us to invent, experiment and taste new flavours with which to surprise the palate.

Therefore we gladly assess the requests of customers who wish to taste, from an agreed minimum order, artisanal burrata customised in taste.

The combinations can be different, all conceived by our cheesemakers to ensure that each variation does not compromise the balance of flavours, while preserving the organoleptic properties of our ‘white treasure’.
